2 Cups Black Turtle Beans
1/2 Cup Brown Basmati Rice
Sea Salt, Cayenne, and Fresh Ground Black Pepper
Cover with water and cook on high in your crock pot for six hours.

Put most of your meat and vegetable mix into the crock pot with your jar of salsa. Add enough water to cover the beans and cook on high for one hour to heat it back up.
Serve with your favorite garnish!
Enchiladas
Fry eight corn tortillas in olive oil
Sauté an onion, peppers, and garlic with one pound of ground beef
Mix a half cup of sour cream with 1/2 can of red enchilada sauce
Add 2 cups of beans and rice to the meat and vegetables.
You can roll each individual tortilla with meat and cheese or you can do it my way quickly and layer your ingredients like a lasagna.
Add the other half of the can of enchilada sauce and then sprinkle with cheese and sliced tomatoes.
Bake 400 degrees for thirty minutes. Let it sit for ten minutes before serving.

Strain two cups of the beans and rice and set them aside for a salad
