Jenny’s orange ginger granola
7 cups organic old fashioned thick cut oatmeal
2 cups raw sunflower seeds
1 cup organic olive oil
1 cup local raw honey
Mix these together
Add in:
1/2 cup each of Fresh Ground
Golden Flax Seeds
Chia seeds
Pumpkin Seeds
Add together:
1 tbs cinnamon
1 tbs Fresh Ground Fennel seed
1 tsp Fresh Ground white Sesame seed
2 tbs tumeric
1 tbs Fresh Ground Cardamon pods (I grind all of the seeds in a mini electric coffee mill)
Mix seeds with a cup of white sugar and one can of frozen orange juice concentrate. (I let this sit on the counter for a few hours to thaw. A spoonful of Sugar helps that medicine go down!)
Add seeds and sugar to the oat mix
Mix well, adding in the zest of one orange, a few drops of orange essential oil, and a freshly juiced big hunk of ginger. (I use my electric juicer to extract the liquid from the ginger root)
At some point in the mixing I hand the bowl over to Paul to do some serious hand mixing because our electric mixers have lived and died over this recipe.
Bake in a flat dish for 90 minutes at 325. Every 15 min pull it out and stir until golden.
Mix a few cups of raisins, dried cherries, and date pieces into the granola while it is still hot to reanimate the fruit.
I use this granola in bowls with fresh berries, jam, yogurt, on salads, in trail mixes and sprinkled on hot oatmeal.
Store in an air tight container.
